Cardamom 
Cardamom is one of the world’s very ancient spices. It is native to the East originating in the forests of the Western Ghats in southern India, where it grows wild. Today it also grows in Sri Lanka, Guatemala, Indo China and Tanzania. The ancient Egyptians chewed cardamom seeds as a tooth cleaner; the Greeks and Romans used it as a perfume. Vikings came upon cardamom about one thousand years ago, in Constantinople, and introduced it into Scandinavia, where it remains popular to this day.
Cardamom is a reputed fruit that grows on the cardamom plant and is used as an exquisite flavored spice all around the globe. It is considered as the “Queen of spices”, it being a highly prized spice as well. The cardamom plant is a long living tropical herb plant belonging to the ginger family Zingiberaceae and grows from a thick rootstalk up till around 6 to 10 feet.

Turmeric (Curcuma longa L), the ancient and sacred spice of India known as ‘Indian saffron’ is an important commercial spice crop grown in India. It is used in diversified forms as a condiment, flavoring and coloring agent and as a principal ingredient in Indian culinary as curry powder. It has anti cancer and anti viral activities and hence finds use in the drug industry and cosmetic industry. 'Kum-kum', popular with every house wife, is also a by-product of turmeric. It finds a place in offerings on religious and ceremonial occasions. A type of starch is also being extracted from a particular type of turmeric. The increasing demand for natural products as food additives makes turmeric as ideal produce as a food colorant.
Turmeric is the dried rhizome of Curcuma longa L., a herbaceous perennial belonging to the family Zingiberaceae and a native of South Asia particularly India. The plant is propagated from rhizomes. The leaves are long, broad, lanceolate and bright green. The flowers are pale yellow and borne on dense spikes. The pseudostems are shorter than leaves. The rhizomes are ready for harvesting in about 7 to 9 months after planting.

Black Pepper

Clove 
Cloves are the aromatic dried flower buds of a tree in the family Myrtaceae. Cloves are native to Indonesia and used as a spice in cuisines all over the world.
Cloves can be used in cooking either whole or in a ground form, but as they are extremely strong, they are used sparingly. In south Indian cuisine, it is used extensively in biryani along with "cloves dish" (similar to pilaf, but with the addition of other spices), and it is normally added whole to enhance the presentation and flavor of the rice.







Nut Meg
Mace is the ground outer covering (Aril) of the nutmeg seed. A piece of ungrounded Mace is called a Blade. It is commonly found in Indonesia, Grenada. The more the mace gets drier it turns out to be more orange in colour that resembles its guarantee of high quality. The mace is also found in Creamy and Brown varieties. The whole dried mace is known as Blade. Mace has a flavour and aroma similar to Nutmeg, with slightly more pungency. 

Mace has a versatile flavour that can be used in various cooking preparations. Mace is the main flavouring of White Sauce, Lasagna, Stews and Ragouts, also for Sausages and Pastries, Jam, and in some Indian desserts and also in Mughlai cuisine. In Hindi it is known as Javitri, Javinthri, Jaypatri. The Mace is highly nutritional product that contains protein and fibre. 

Spices add variety in cooking and food preparation. It also add aroma to enhance taste of the food. Mace is very popular in European foods where it is used in both savoury and sweet dishes. It is the dominant flavour in doughnuts. Mace can be used just as Nutmeg in things like cakes, scones, and spice cookies. It can also be used in curries, soups, cream sauces, roasts, and various other ingredients. 
Ginger
Ginger (Zingiber officinale Rosc.) is an important commercial crop grown for its aromatic rhizomes which is used both as a spice and a medicine. Ginger of commerce is the dried rhizome. It is marketed in different forms such as raw ginger, dry ginger, bleached dry ginger, ginger powder, ginger oil, ginger oleoresin, gingerale, ginger candy, ginger beer, brined ginger, ginger wine, ginger squash, ginger flakes etc.
Ginger is the rhizome of Zingiber officinale Rosc., a herbaceous perennial belonging to Zingiberaceae, and is believed to be native of south-eastern Asia. It is propagated through rhizomes. The rhizomes put forth erect, leafy stems, 30-90 cm in height. The base of the leaves sheathe the stem. The leaves are dark green, 15-20 cm long, narrow, lanceolate and with a prominent midrib. The flowers are small, yellowish, speckled, each with a purple speckled lip and borne on a spike. When the plants are about 9 months old, the green leaves turn yellow.
Fresh ginger is one of the main spices used for making pulse and lentil curries and other veg and non veg preparations. Fresh, as well as dried, ginger is used to spice tea and coffee. Ginger is also consumed in candied and pickled form.
